Seabass,

 Fillet pan-fried in hazelnut oil served on a cauliflower risotto with a

peashoot and crisp potato salad complemented

by a curry dressing

 

Quail,

Breasts gently roasted with confit legs, white game and chicken

boudin, parsnip cream, and warm honey madiera reduction

 

Monkfish,

Slices marinated in a spicy lemon marinade served with bok choi, tempura vegetables, and a miso mustard dressing

 

Brill,

Fillet placed on caramelised fennel with confited tomatoes, fennel

Dust, foam, and a roast chicken sauce

 

Duck Eggs,

Gently cooked with grated fresh truffle served with wild

mushroom and tarragon ravioli,

steamed asparagus spears

Wood Pigeon,

Breasts gently roasted served on braised red cabbage with gratin

potatoes, a fricasse of wild mushrooms and baby onions

finished wth a morrel mushroom sauce

 

Skate Wing,

Flaked and layered with tomato fondue and courgettes, gently

steamed and accompanied by a baby leek tartlet, and

creamed garlic potatoes, basil pesto

 

       Duck Breast,

Honey roasted and spiced served with confit duck cake and

shallot presented in four ways - creamed, tempura, tatin and

caramelised finished with a duck sauce

 

Red Mullet,

Fillets served on aubergine caviar with basil accompanied by seared

scallop with baby spinach and anchovy beignet, finished

with a warm tomato dressing

 

Veal Loin,

Gently pan-fried, with dauphinoise potato peppered swede, and a little veal and mushroom pie, complemented by a light

 Jerusalem artichoke cream
